Crispy Chicken with Honey Mustard Avocado Maki

Ingredients List

  • 1 ½ c (375 ml) sushi rice
  • 1 ½ tsp (7 ml) sugar
  • 1/2 tsp (2 ml) salt 
  • 1 ½ tbsp (22 ml) rice vinegar
  • 8 Chicken Breast Strips 
  • 1/4 c (60 ml) mayonnaise
  • 1 tbsp (15 ml) toasted sesame seeds
  • 4 sheets nori
  • ½ avocado, sliced into 8
  • 4 English cucumber sticks, about 8" (20 cm) long

Preparation Instructions

  1. In a saucepan, cook the sushi rice according to package instructions. 
  2. In a large bowl, combine sugar, salt and rice vinegar. Add the cooked rice, stir, cover with a clean cloth or plastic wrap and let cool.
  3. Defrost dip according to package instructions. Let cool.
  4. In a bowl, mix the 2 packets of honey mustard sauce from the box of chicken strips with the mayonnaise and sesame seeds.
  5. On a sushi mat, place a sheet of nori with the longer side closest to you. 
  6. Moisten your fingers with a little water, then spread a thin layer of rice onto the nori, excluding 1" (2.5 cm) all around.
  7. Place in a row the other ingredients along the edge closest to you: 2 chicken strips, 1 cucumber stick, 2 avocado slices and a little sauce.
  8. Lightly wet the 1" border with water, then roll forward firmly, sealing the log.
  9. Repeat the steps for all nori sheets.
  10. Cut the rolls into 8 pieces and serve the maki with the remaining sauce.
