Ingredients List

  • 1 container 1 lb (454 g) St-Hubert Macaroni Salad
  • 3 c (750 ml) chopped romaine
  • 1 carrot, grated
  • ¼ English cucumber, cut into semi-circles
  • 1 c (250 ml) red grapes, halved
  • 3 hard-boiled eggs, cut in 2 or 4
  • freshly ground pepper, to taste
  • 3 lemon wedges

Preparation Instructions

  1. In 3 bowls or lunch dishes, divide the lettuce.
  2. Add macaroni salad, grated carrot, cucumber halves and grapes, placing them in sections.
  3. Garnish with eggs and ground pepper to taste.
  4. Before serving, add the juice of a lemon wedge to each bowl and stir if desired.
