Decor and Architecture
As our chain grew in the late 70s and early 80s, we updated our signature look. The brown brick exterior, latticed windows with white pine frames and golden-shingled roofs lent a decidedly rustic flair to each of our establishments. On top of the building was a small tower in the shape of a truncated pyramid, the same shape that now features prominently in the St-Hubert logo.
The interior was also transformed, using pastel shades to provide a more lively, cheerful ambiance. Booths were replaced by tables, and non-smoking sections were introduced.
