Texas-Style Pulled Pork Chili

Ingredients List

  • 1 box St-Hubert Texas-Style Ribs
  • 2 tsp (10 ml) canola oil
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • ½ green pepper, small dice
  • 2 cans 19 oz (540 ml) red, black or mixed beans, rinsed and drained
  • 1 c (250 ml) frozen corn kernels
  • 1 can 28 oz (796 ml) diced tomatoes
  • 1 can 95.5 oz (156 ml) tomato paste
  • Salt and freshly ground pepper
  • Toppings: sour cream, fresh cilantro, grated cheddar

Preparation Instructions

  1. In large pan, heat oil over medium-high heat and sauté the onion with garlic and pepper for 5 minutes.
  2. Add carrots, corn and diced tomatoes.
  3. Bring to a boil, add ribs with sauce from the bag, reduce to medium-low heat, cover and simmer 20 minutes.
  4. Remove the ribs from the pan, debone and coarsely chop.
  5. Add the tomato paste to the pan, stir and add the boneless rib meat.
  6. Simmer for 5 more minutes. Adjust seasoning and enjoy with garnishes.
