Apple Cabbage Salad with Caramelized Nuts

Ingredients List

  • 1 container 1 lb (454 g) St-Hubert Traditional Coleslaw
  • 2 tsp (10 ml) butter
  • 1/4 c (60 ml) walnut pieces
  • 1½ tbsp (22 ml) maple syrup
  • 1 apple, chopped
  • 3 tbsp (45 ml) freshly chopped parsley

Preparation Instructions

  1. In a large pan on medium-high heat, sauté the nuts for 7 to 10 minutes or until lightly golden.
  2. Add the maple syrup and continue cooking for 3 to 5 minutes, or until the syrup has thickened and sticks to the nuts.
  3. Remove from heat and transfer to a board covered with parchment paper. Let cool and chop coarsely.
  4. Meanwhile, slice the apple and chop the parsley.
  5. In a bowl, combine coleslaw, apples, parsley and caramelized nuts. Stir and serve with roasted fish, roast pork tenderloin or roasted chicken.
