Chicken Spread Canapé with Cranberry Onion Jam

Portions: about 30 canapés / jam = 1/4 c (60ml)

Ingredients List

  • 1 container St-Hubert Chicken Sandwich Filling
  • 1 tsp (5 ml) butter
  • 1 onion, chopped
  • 1/4 c (60 ml) cranberry juice
  • 2 tbsp (30 ml) maple syrup
  • Salt and freshly ground pepper
  • 2 tbsp (30 ml) freshly chopped parsley
  • About 30 plain crackers or grilled baguette slices

Preparation Instructions

  1. In a saucepan, melt the butter over medium heat and sauté the onion for 5 minutes.
  2. Add cranberry juice, syrup and season.
  3. Bring to a boil and continue cooking for 10 minutes or until almost all the liquid has evaporated.
  4. Remove from heat, transfer to a bowl, let cool and add parsley.
  5. Depending on the cracker size, spread about 2 tsp (10 ml) of chicken onto each and top with about 1/2 tsp (2 ml) of jam.
