Crispy Chicken Spring Rolls

Ingredients List

  • 1 box St-Hubert Chicken Breast Strips 
  • 8 rice paper wrappers
  • 8 Boston lettuce leaves
  • 2 c (500 ml) your choice of julienned vegetables (carrots, cucumbers, peppers, snow peas, minced red cabbage, etc.)
  • Fresh mint or cilantro leaves to taste

Preparation Instructions

  1. Cook chicken strips according to package instructions. Let cool.
  2. Pour the honey mustard sauce into a small bowl as a dip.
  3. Fill a bowl large enough to soak the rice paper wrappers with warm water.
  4. Soak one wrapper at a time for a few seconds and place on a board. They will still be a little stiff, but will soften quickly.
  5. Place a lettuce leaf on the lower part of the rice wrapper, then add 1/8 of the vegetables, 2 strips of cooled chicken and fresh herbs, if desired.
  6. Fold the left and right sides over the filling and roll starting from the bottom. 
  7. Repeat steps for all rolls. If prepared in advance, wrap each one in plastic wrap to prevent them from sticking together.
  8. Serve with honey mustard sauce.
