  1. Preheat oven to 375 °F (190 °C).
  2. Mix mustard with garlic and spices.
  3. Heat a cast iron skillet or Dutch oven to high and sear the roast on all sides.
  4. Add mustard mixture to roast and coat well.
  5. Continue cooking in the oven for 45 minutes to 1 hour for a medium rare roast or according to desired doneness.
  6. Remove from pan and cover with tinfoil.
  7. Place the pan on the stove and turn the heat to medium. Sauté the shallots in the pan.
  8. Add the contents of the packet and water as indicated on the package. When the sauce is ready, slice the roast and serve with the sauce.
