Ingredients List
1 packet (35 g)
St-Hubert Red Wine Gravy Mix
4 pieces of bacon, coarsely sliced into strips
1 onion, chopped
2 stalks celery, chopped
1 c (250 ml) dry green lentils
4 c (250 ml) sweet potatoes, chopped
1/4 c (60 ml) fresh parsley, coarsely chopped
Salt and freshly ground pepper
Preparation Instructions
In a large saucepan over medium-high heat, cook bacon for 3 minutes
Add onion and celery and cook for 2 minutes.
Add lentils, stirring to coat well in bacon fat.
Stir in contents of sauce packet and 3 cups (750 ml) cold water.
Bring to a boil, cover and simmer for 20 minutes.
Add the black beans and cook for another 15 to 20 minutes. If lentils aren't tender, continue cooking for a few minutes.
Garnish with fresh basil and adjust seasoning before serving.
