Lentil Stew with Bacon and Red Wine

Ingredients List

  • 1 packet (35 g) St-Hubert Red Wine Gravy Mix
  • 4 pieces of bacon, coarsely sliced into strips
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 1 c (250 ml) dry green lentils
  • 4 c (250 ml) sweet potatoes, chopped
  • 1/4 c (60 ml) fresh parsley, coarsely chopped
  • Salt and freshly ground pepper 

Preparation Instructions

  1. In a large saucepan over medium-high heat, cook bacon for 3 minutes
  2. Add onion and celery and cook for 2 minutes.
  3. Add lentils, stirring to coat well in bacon fat.
  4. Stir in contents of sauce packet and 3 cups (750 ml) cold water.
  5. Bring to a boil, cover and simmer for 20 minutes.
  6. Add the black beans and cook for another 15 to 20 minutes. If lentils aren't tender, continue cooking for a few minutes.
  7. Garnish with fresh basil and adjust seasoning before serving.
